Turns out
Herr Quattro
is juuuuuust fine during an ice-storm. Yes, over and inch of sleet and freezing rain sucks and I wish it was snow, but the Audi basically gave zero fucks about the ice. Parking lots, roundabouts, exit ramps, steep inclines- nothing phased it. And to think that it's this damned good on cheap little $51 Chinese all-seasons. I can only imagine how unstoppable it would be on a set of Blizzaks or something.
As for how the Audi handles in this stuff? Basically it's a case of "MOAR POWAAAAA!" More throttle is basically the answer for everything, once you've got the front end settled to dial out the understeer. It basically became a game of 'Downshift, dab of brakes, steer in, plant the throttle, and just counter-steer while feathering the throttle'. Want to change the direction of the slide? Lift off the throttle, adjust steering angle, back on the throttle while looking at where you want the car to go. It's just an unstoppable machine once you figure out how to handle the funky weight distribution. I
reallly
wish I lived somewhere where we actually got a consistent amount of snow. South Carolina usually just gets a fuck-ton of ice, like tonight.
Also, just had to stop in at the mothership for a photo-op. The irony was just too tempting.

I've driven my wife's A4 to work the past two days. Step 1 for me is to turn off ESP. Then it's exactly as you describe. Her car has Conti Extreme Contact DWS tires. The do very well for all seasons not being snow specific.
My GTI isn't moving for quiet a few more days even though I have snow tires. We got another 3" after I took this picture. My car is so low it turns into a plow.

Mine doesn't have any sort of traction control or stability control or anything. Just a slant five up front, a manual gearbox, and 3 differentials with a button to lock the rear one. It technically has ABS, but I pretty much just leave it turned off. And yes, there is a button that lets you turn off ABS. I love old German cars, haha.

I've driven a 5000CS. Very similar, very fun in snow.
